Café
Miramar is one of the finest coffees
grown in Nicaragua. Café Miramar is an organically grown
Arabica bean cultivated on a 20 acre farm at an altitude of
4,000 feet in the mountains of northern Nicaragua. No chemicals
are used in its cultivation and no trees are cut down on the
farm. Therefore, the robust plants are grown under the shade
of the forest canopy, extending their growing season and
developing that intense yet smooth flavor for which Nicaraguan
coffee is becoming famous.
Miramar is
harvested by hand, the old fashioned way, without machines.
After the ripe cherries are picked and hauled by horse and human
to the farm’s mill to remove the pulp from the beans (ok, an
electric motor is used in this process). The beans are then
laid in raised screens under the sun for drying and the pulp is
used for compost. After several days the beans are sent to the
local mill by horse to remove the last remaining skin from the
dried beans. Then they are finally ready for roasting.
Café Miramar is
roasted exclusively at the El Gato Negro Coffeehouse in San Juan
del Sur, Nicaragua. El Gato Negro is the sole vendor of Café
Miramar. Roastmaster Celia Cortez spends her time coaxing the
innate flavors from our selection of Single Origin Coffees.
Celia roasts in small batches with an Ambex gas-fired 2.2 kilo
roaster. She has personally roasted and packaged your coffee.
